Roast Potatoes - The Secrets of a Successful Satisfying Crunch

A Sunday lunch with roast chicken, roast potatoes, steamed vegetables and gravy is one of those classic English meals that can soar into the culinary sublime or dive into the dismals. A good experience leaves you satisfied and replete, a bad one consigns British cooking to the doldrums, where our European neighbours shake their heads sadly over our penchant for soggy vegetables, greasy potatoes and overcooked meat.

In our family the rest of Sunday lunch takes second place to the roast potatoes - they are the raison d'etre of Sunday lunch and if I try and produce a casserole with baked potatoes as a change, I'm told sternly by my four year old that it's not a proper Sunday lunch.

On my mettle to keep the family happy, over the last few years I have gradually perfected the art of roast potatoes, until they are golden, crispy and soft and fluffy but not soggy inside.

Here are my methods for the perfect roast potato:

1. Par-boil the potatoes first.
Once they are peeled and cut into similar sizes (small potatoes in two, large ones in four), put the potatoes into cold, salted water and bring to the boil. Once the pot is boiling, boil for about 4 minutes, then drain all the water off (keeping some for the gravy later), let some of the steam evaporate off, then clamp on the lid and shake the potatoes about until the edges have slightly bruised and fluffed up. This is what will absorb the hot oil to make a crisp surface as the potato roasts. Leave the lid off now so they dry a little, until the oil is ready.

2. Heat the oil first.
In a roasting pan, that is large enough to take the potatoes in a single layer, put enough olive oil or vegetable and olive oil mixed, to cover the bottom with ease. The potatoes mustn't be bathing in the oil, so keep it less than cm / inch deep. Put the tray into the hot oven (200C/400F) for 10 minutes before the potatoes need to go in. Once the oil is hot, put the potatoes in so they sizzle and toss them.so they are coated all over, then return the tray to the oven to roast. The potatoes can be turned two or three times during cooking.

3. Timing.
The potatoes need to stay in the hot oven until the very last minute when you are ready to serve lunch. If they hang around keeping warm they lose their crisp edge and gradually dwindle into leathery bullets. They need 1 to 1 hours at 200C / 400F to reach optimum crispiness. Time the meat to be ready 10 minutes before them, so it can rest, you can make the gravy and summon the troops to table, and only then produce the potatoes still sizzling from the oven. If people are late the potatoes can take another 10-15 minutes getting even more crispy in the oven, but after that I'd just get on and eat them without the latecomers!

4. Roasting tin.
I get the crispiest results from my enamel roasting tins. Pyrex trays result in softer, less crispy potatoes, any metal tray is better.

5. Temperature.
Keep the hottest part of the oven for the potatoes. Juggling roast meat, roast potatoes and everything in a small oven is tricky but the potatoes will only get crisp if they can bask in blazing heat for a while. If all else fails, when the meat comes out, turn the oven up to max and put the potatoes on the top shelf for a blasting. Last on the list of emergency remedies, put them under a hot grill (broiler) for the last five minutes while you are getting the table ready.

Once you have perfected your roast potatoes another problem arises - you can never make enough of them. I now allow five per person in our family!

Take Advantage of Pre-Paid Meal Plans
With pre-paid meal plans, which are offered by most colleges to students staying on campus, you can actually get a pretty good deal when it comes to how much you will be paying per meal. Of course, you need to be on campus and at the student dining hall in order to take advantage of these free meals. Try not to get caught up in socializing off campus so much that you miss out on the meals you have already paid for with the pre-paid meal plan.

Shop Smart when Purchasing Textbooks
College textbooks can be quite costly. In fact, the books you need for just one class can cost you hundreds of dollars if you buy your books from the campus bookstore.Rather than shelling out unnecessary dollars, see about buying the used books the store will have to offer. You will need to get in early, however, because used books usually fly off of the shelf pretty quickly.

If the campus bookstore is out of used books, try looking online with bookstores such as Amazon.com. Another option is to ask around campus. More than likely, there is someone else on your campus that has already taken the class that will be more than happy to sell the book to you.

Another way to save money on textbooks is to purchase international books. Books sold in other countries usually have the same content as those bought in the states but cost much less in order to be appropriate for that countrys economy. These books may be made of less quality paper and may contain only black and white print, but the savings can be quite substantial.

Bypass the Bookstore when Selling Old Textbooks
When you are done with your textbooks, you most likely wont be using them again. Therefore, you can sell the books in order to recoup some of the money you spent to buy them in the first place. Many people take their textbooks back to the campus bookstore to resell them. While this is convenient, you can actually make more money if you sell your books directly to someone without bothering with the bookstore. In fact, you can make more money while also providing that person with a better deal than what the bookstore has to offer.

Look Into Student Discounts and Freebies
In order to experience college to its fullest, you will likely want to be involved in a number of different activities. Many times, students can actually receive special discounts or can even get into certain events for free. Be sure to find out about free events and concerts that are offered nearby and take advantage of them in order to socialize and have fun. Also, ask businesses whether or not they offer student discounts and take advantage of these offerings as well.

Libbie Crib Bedding by Glenna Jean - A Product Review

Glenna Jean is a well-known designer and manufacturer of premium baby crib bedding and accessories, available through baby specialty stores and online retailers. One of Glenna Jeans sets is Libbie, which was introduced in late 2005. The Libbie bedding collection is a visually striking set with ruffles and fringe for those who desire a very feminine appearance for their baby girls room decor. With a four-piece crib set retailing for $400 or more, Libbie is far more expensive than many popular themed bedding collections from other national brands, such as Kidsline and Lambs & Ivy. Then again, it is far less expensive than custom-made crib bedding with comparable fabric quality and styling. If the price is within your budget, this is truly premium quality merchandise that more than justifies the price.

Libbie comes as a four-piece set which includes a quilt, bumper, crib skirt, and fitted sheet. There is also a five-piece option with your choice of a pillow or diaper stacker available. All pieces are also sold separately. The collection is made from a 60/40 cotton/poly blend and is machine washable. As with most bedding collections, accessories are available to enhance the nursery. A common accessory not available in the Libbie pattern is a hamper. On the other hand, Glenna Jean is making available a number of accessories not normally seen, including: a memory board, a chandelier, and various signs for decorating the walls.

The pattern used in Libbie is a genuine patchwork, in which each patch of fabric is sewn together to create the pattern used; rather than a printed patchwork in which the patches are printed onto the same fabric and stitching is used to make the patches appear independent of each other. The quilt is comprised of several squares of each of the main fabrics used in the bedding collection pink toile and gingham, solid pink chenille, green cable knit, pink and cream star pattern. Upon close inspection of each of the fabrics, I am pleased that Glenna Jean has used only premium quality fabrics. The quality of the stitching and overall workmanship is very good, as I would expect at this price point.

The bumper measures 9.5 tall with pink satin ties on the top only. One minor flaw of the bumper is that is in one continuous piece, which makes washing more of a chore. The bumper features a poodle fringe along the top. The fringe is created from thin, kinked threads of pink and green and is soft to the touch. Its an interesting addition to the bumper. Another feature of the bumper is the patchwork pattern appears on both sides of the bumper. In many cases, the inward facing part of the bumper features the patterns used in the collection, while the outward facing area is a plaid or another striped fabric used as a background. The fitted crib sheet is a cream fleece, which is also on the back of the quilt. The crib skirt has a 15 drop and features the fringe in a pom pom form.

Because Libbie merchandise is assembled in the United States, it can be particularly appealing for Canadian customers purchasing from a US retailer.
